Superette Happy Hour: Mekong Baby’s Sticky Mango Colada

Just a hop, skip and a jump from our Ponsonby store, Mekong Baby is one of our absolute favourites so we’ve teamed up with them to bring you a delicious Sticky Mango Colada for your Friday night drinks!

INGREDIENTS
 
– 30ML Dark Rum
– 30ml Coconut Cream 
– 30ml Mango Puree 
– 30ml Mango Nectar 
– 30ml Rice Milk Reduction 
– 5ml Fresh Lime Juice 
– Coconut Chips for garnish (Mekong Baby makes their own following the below recipe but you could also use desiccated coconut) 
 
METHOD
 
To prepare the coconut chips, blend coconut chips for a small chip and bake them in oven on baking paper at 150° for 3 minutes. You want them gold and crispy. 
 
To reduce your Rice Milk, boil 1 litre of rice milk until it is reduced to 600ml (you can do a smaller quantity of this if you would prefer). Set aside to cool.
Rub lime around rim of a coupe glass and dip in to coconut chips.

 
Shake all ingredients together in a cocktail shaker and double strain in to your rimmed glass.
