Clare Viver Ratatouille

Ma Belle Mère’s Ratatouille

Preparation: 20 minutes
Cook: 1 hour 30 minutes
Serves 6

1 large onion, chopped
4 tomatoes, quartered
3 eggplant, peeled and sliced
5 cloves of garlic, minced
2 peppers, sliced
5 medium zucchini, sliced
1/2 cup olive oil
1/2 bottle dry white wine
1 tablespoon tomato soup concentrate
1 bouquet parsley and thyme
3 large basil leaves
4 bay leaves
Salt and pepper

In a large pot, brown onion in olive oil. Add garlic, tomatoes, tomato soup, white wine, and herbs; season with salt and pepper, and bring to a boil. Add vegetables, let cook uncovered over medium heat for 40-50 minutes until veg is cooked through. Serve hot or cold.
